MATTOON — Ronda's Catering recently began serving meals to the public a few days each month at the Mattoon American Legion, where the catering service is based.

Owner Ronda Woodrum of Toledo also is continuing to prepare food for business meetings, reunions, weddings and other special events as part of the new catering service that she started last year.

Woodrum, who previously cooked for D & W and Pagliacci's in Mattoon, said she has enjoyed working in a restaurant setting and serving the public again at the Mattoon American Legion, 1903 Maple Ave.

The post's dining room is open to the public when Woodrum is cooking at 11 a.m. to 2 p.m. every Friday, 5:30 to 7:15 p.m. every Tuesday, and 6 to 7:30 p.m. on the fourth and fifth Friday of each month. Woodrum said she serves a variety of sandwiches and entrees, including all you can eat fried fish and shrimp at lunch on Fridays.

Woodrum said she has been glad to expand her partnership with the Legion after having used the post's kitchen for her business and catering special events on site there for several months.

"We help each other out, so it works out for both of us," Woodrum said of the Legion.

Woodrum started Ronda's Catering after Pagliacci's restaurant closed last summer. Prior to cooking at Pagliacci's and staffing its catering service, she worked at D & W and its predecessor A & W restaurant. Woodrum said she learned a lot at D & W about cooking from the late Dorothy Hurst and from Dave Spain, who still helps with her catering service.

The Ronda's Catering menu offers broasted chicken, hamburgers, steaks, lasagna and other pastas, a variety of casseroles, and more. Some of the side dish options include green beans, mashed potatoes, and scalloped potatoes. Woodrum said chocolate, coconut, and lemon pies are among her most popular desserts.

"I really have a wide variety of things on the menu," Woodrum said, adding that she takes requests for preparing off menu catering items.
